High-Protein Banana Muffins

If you're looking for a banana muffin that tastes cozy and indulgent but still hits some balanced nutrition goals, these muffins are it. They’re lightly sweet, extra moist from Greek yogurt, and sneaky high-protein thanks to Kodiak mix and hemp seeds. Perfect for breakfast meal prep, snacks, or paired with coffee.

This recipe makes 12 muffins.

Ingredients

Dry Ingredients

  • 1 cup Kodiak Power Cakes mix (150g)

  • 1 tsp of baking powder

  • 1/4 tsp baking soda

  • Pinch of salt

  • 1/2 tsp cinnamon

  • 3 tbsp hemp seeds (optional)

Wet Ingredients

  • 2 tbsp ground flaxseed + 5 tbsp warm water

  • 1/4 cup unsalted butter, room temperature (56g)

  • 1/4 cup sugar

  • 1/3 cup Greek yogurt, full fat or 2% (~80g)

  • 2 super ripe bananas, mashed (~200g)

  • 1/2 tsp vanilla extract

Add-Ins (Optional)

  • 30g chopped walnuts

  • 30g dark chocolate chips

Instructions

  1. Preheat the oven to 425°F and grease a 12-cup muffin pan.

  2. Mix the ground flaxseed powder and warm water in a small bowl and allow the mixture to rest for 8–10 minutes to thicken. It should have a gel-like consistency.

  3. Whisk together all dry ingredients in a medium bowl.

  4. In a separate bowl, use a hand whisk or stand mixer to cream the butter + sugar together until combined. Add in remaining wet ingredients and mix.

  5. Add half of the dry mixture into the wet and mix to combine with a spatula. Add the remaining dry ingredients and mix until just incorporated (don’t overmix).

  6. Fold in the walnuts and dark chocolate chips.

  7. Let the batter rest for 10 minutes — this step is crucial as the dough has time to hydrate which helps the muffins rise higher.

  8. Fill the muffin pan equally for 12 muffins. Try to mound the dough in the middle to help for a better bake.

  9. Bake at 425°F for 7 minutes, then without opening the oven, reduce heat to 350°F and bake for an additional 10–12 minutes.

  10. Let cool in the pan for 5 minutes, then transfer to a wire rack to finish cooling.

  • Sweetness Level: This recipe is lightly sweet — feel free to increase sugar to 1/3 cup if you prefer more traditional bakery sweetness.

     • Walnuts → pecans, almonds, or seeds
     • Dark chocolate → omit for lower sugar or swap for mini chips
