Trader Joe’s–Inspired Grilled Veggie & Tofu Sandwich
This sandwich is what I make when I want something seriously satisfying without feeling heavy or boring. It’s crunchy, creamy, spicy, cheesy, and packed with veggies and protein — basically everything I want between two slices of good sourdough.
The combination of herby pesto, spicy Calabrian chili mayo, golden pan-fried tofu, and melty pepper jack makes this sandwich feel as if it you got it at a cafe. All of the ingredients can be found at your local Trader Joes which makes it easy enough to throw together on a weeknight. Serve it with sweet potato chips (or your favorite chips) and you’ve got a meal that hits every craving.
Ingredients
2 slices of sourdough bread, lightly toasted
Pesto (homemade or the Trader Joe’s one works great)
Mayonnaise (regular or vegan)
Trader Joe’s Calabrian Chili Bomba Sauce
Tomatoes, sliced in rounds
Bell Pepper, sliced in long strips
Onions, sliced in long strips
Baby Bella mushrooms, sliced however you like
Pepper jack cheese, sliced
Extra-firm tofu, sliced into horizontal slabs (about 1–2 cm thick)
Olive oil to drizzle
Trader Joe’s Italian-Style Sofrito Seasoning Blend
Pickled jalapeños
Avocado, sliced
Instructions
Prepare the tofu
Slice the tofu into horizontal rectangles about 1–2 cm thick. Drizzle with olive oil and sprinkle generously with the Italian-style sofrito seasoning.
Heat a pan over medium heat and pan-fry the tofu until golden brown on both sides. Set aside.Grill the veggies
In the same pan (or a separate one), sauté the bell peppers, onions, and mushrooms until soft, caramelized, and lightly charred. Season lightly with salt if needed.Toast the bread
Lightly toast the sourdough slices so they’re just crisp on the outside but still soft inside.Build the sandwich
Spread pesto on one slice of bread.
On the other slice, mix mayo with Calabrian chili bomba sauce and spread evenly.
Layer tomato slices on the pesto side.
Add grilled veggies, pan-fried tofu, pepper jack cheese, pickled jalapeños, and sliced avocado.
Grill the sandwich
Close the sandwich and place it on a pan or griddle over medium heat. Cook until the bread is golden and toasty and the cheese starts to melt, flipping once.Serve
Slice in half and serve warm.
Additional Notes & Tips
Adjust the spice level by adding more or less Calabrian chili bomba or jalapeños.
You can easily make this vegan by using vegan mayo and dairy-free cheese.
If you’re meal-prepping, the tofu and veggies can be cooked ahead and assembled fresh.
Serve with sweet potato chips or any chips you love for the perfect crunch on the side.
